Applebees bacon cheese potato soup?

does anyone have a good recipe for the bacon cheese potato soup like the one at applebees?

it doesnt have to be the exact one, but i would like one that tastes just like it.

CREAM OF POTATO SOUP WITH BACON %26amp; CHEESE:



1/4 cup (1/2 stick) butter

1 small onion, diced

2 medium carrots, diced

8 medium russet potatoes, peeled and cubed

4 cups heavy cream

6 chicken bouillon cubes, dissolved in 1/2 cup hot milk

1 cup half and half

1 teaspoon salt

1/4 teaspoon pepper

crumbled bacon bits

grated sharp chedder cheese



Melt butter in saucepan. Saute onion and carrots until both are slightly tender (about 5 minutes). Add the potatoes, cream, and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft. Add the half %26amp; half.



Top with bacon bits and chedder cheese.

You can also add shrimp to it. We have done this and the guys love it.
