I make mine with Monterrey Jack with Jalapeċ¸½os (canned). If you want, just buy PepperJack Cheese.
Here's the key to get it to taste and have the smoothness as Applebees'.
Using the double-boiling method: Get a deep pot with about 2 cups of water. Place a bowl large enough for you cheese topping and make sure it doesn't touch the water. You just want it to get hot.
Place the Pepper Jack Cheese and add a little half-'n-half to it while you stir constantly until you get the creamy texture you need. You can add canned pimentos to it and a pinch of cayenne pepper too.
I always season it with fresh ground white pepper as well. Try this and you'll be making a delicious cheese dip for your nachos. Great for a fondue also!!!
