It's actually called Caesar Dressing. It consists of an anchovy based paste along with the general buttermilk and mayo base that goes in most white salad dressings. This dressing comes in one gallon jugs and is shipped to the restaurant, so there's no way it can be modified in the store. I've never in my experience seen a clear Caesar dressing unless it they used Italian dressing as a substitute because they ran out of Caesar.
